Basic Cheesemaking: Mozzarella and Feta

Have you ever wondered what kind of magic made the cheeses you’ve enjoyed all your life? Well, there’s no magic to it at all. You can make your own feta and mozzarella cheese without much effort at all using simple equipment available in most kitchens. These simple fresh cheeses only have a few steps start to finish. And making your own from local raw milk will always taste better than anything you can buy. Think how impressed your friends will be when you tell them you made the cheese on their salad or pizza yourself?

In this class, we’ll go through the simple process of making mozzarella and feta from scratch. You’ll learn the basic ingredients in these cheeses and where you can get them. We’ll also talk a little about why we turn milk into cheese as well as the complicated processes of making some of the aged cheeses we love to eat.

Instructor Bio: Dan Durica lives at Dancing Rabbit Ecovillage most of the year and tries to live as self sufficiently as possible. He’s been making cheese on a home scale from raw farmstead milk for almost 15 years and has a lot of experience with fresh cheeses like mozzarella and feta.
