Basic Garden Salad with Alice’s Simple Vinaigrette

For a salad to have flavor and life you have to start with fresh, just picked lettuces like the Garden Salad Framedones in the CSA share.  There was really not much that needed to be done with the micro greens in the share. When I got them home I washed them gently in a bowl of cold water and dried the little leaves in a salad spinner a few handfuls at a time. I spread them out on a dishtowel as I go. Then I roll up the towel and refrigerate until it is time to serve the salad. I find that my greens will stay fresh for days using this method.

 

Alice’s Simple Vinaigrette

  • 4 generous handfuls of lettuce
  • 1 garlic clove, pounded to a fine puree
  • 1 T. red wine vinegar
  • 3-4 T. olive oil
  • Salt and fresh-ground pepper

 

Put lettuce in a large bowl and toss.

Note: Once salad is dressed, it does not keep fresh.

The proportions of oil to vinegar are approximate, so taste the dressing before you toss to be sure you like the tang.
