Radishes with Truffle Salt, Mint, and Olive Oil

Here’s an easy salad to make…perfect for a picnic or light lunch.  This recipe makes 2 to 4 servings.

  • A bunch of radishes
  • A pinch of truffle salt
  • 1 tablespoon light olive oil
  • A small handful of chopped fresh mint

Wash the radishes and finely shave them [slice them in paper-thin rounds].  Put the radishes in a bowl and sprinkle them with the truffle salt.  Pour over the olive oil and add the mint.
